Jaya Spice Secrets is an idea devised by the executive chef and owner Sunita Katoch. Sunita shares with you her secret family recipe of Garam Masala which is the basis of of most of the meals here at Jaya restaurant.

 

With the help of Sunita's recipes, now you can cook traditional Punjabi cuisine with a Kenyan twist in the comfort of your own home!

RECIPE IDEA - FISH PAKORA

 

 

INGREDIENTS:

Add 1/4 tsp of Jaya Spice Secrets Garam Masala Spice Blend

Dry spices (pinch of each): red chilli powder, dried fenugreek leaves,

ajwain

Heaped tablespoon of cornflour

Heaped tablespoon of gram flour

2 x 3 oz Pieces of smoked haddock

1 heaped tsp of grated garlic

1/4 tsp of freshly grated green chillies

2 pinches of salt (or to taste)

A few drops of lemon juice

 

METHOD

Place the two pieces of fish in a mixing bowl and then add the Garam

Masala, all the dry spices, garlic and chilli.

 

Now add a few drops of lemon juice and finish by delicately coating

the fish with the gram and corn flour.

 

To begin the frying process please note you need to heat the frying oil

In a deep pan or fryer for at least ten minutes.

 

Gently and carefully place each piece of fish into the heated oil and

gently fry until golden brown.

 

Serving Suggestion: great with a simple rocket and red onion salad

seasoned with salt, black pepper and lime juice, accompanied by a

chilli jam or fresh mint and yogurt sauce.
